Day 1 is in the books, and it was a bitch. I woke up and almost fell into my morning routine of coffee and creamer. Hold up. Creamer, which is apparently a bottle of artificial chemical death, is now out and apparently coffee is inflammatory. Every time I say “apparently” it is totally acceptable to imagine that I’m air-quoting and rolling my eyes. Cold water it is. Really going to need to find a solution here because coffee was my morning comfort.

Guess I should eat something. This is exciting. Here we go! Decide I’m probably going to burn out on eggs so I go for the loaf of gluten-free bread. Toast up a couple slices, add peanut butter and some blueberries. Never tried that combo before but why not?

Take my breakfast to the office to hammer through emails before the kids wake up. I mindlessly eat my toast, which may have been a good thing because gluten free toast is, in the words of my daughter, doo doo. With the peanut butter and blueberries is isn’t half bad, so self-highfive!

The kids wake up and immediately start gnawing their way through the leftover vacation food. Enjoy it kids! Life is about to get a whole lot more fibrous! I’m secretly happy to drag them along on this adventure, even when they audibly gag when eating a blueberry. 

That breakfast was filling. It took a solid 4 hours before I’m hungry again. Time for old faithful: can of tuna, a healthy splat of mayo and a couple mini cucumbers. I eat this combo almost every day, and the cat is now my BFF because of it.

The infamous 3 pm slump hits me hard. It is like Keto flu, which makes sense since I got out of the car 24 hours ago intent on doing this thing. I’m not trying to do Keto, so this is a clear sign that I’m being too intense. After dropping Peanut off for a play date I scrounge in the car and find a bag of kettle corn left from the car trip home yesterday. A handful takes care of my slump almost instantly.

The Hubs, being awesome Hubs upon hearing my confession, tells me he thinks it’s OK to grab a handful of popcorn when I’m struggling. Good point, Mr. JD. I’m not going to stick to this game for the next 2+ years if I completely deprive myself. But maybe that will be the only kettle corn for a while. I’ll try to do a better job of packing more into breakfast and lunch so I don’t crash at 3.

Now I’m off to make dinner for the fam! I’m excited about this one: salmon with wild rice and broccoli. I find a recipe for lemon pepper salmon on All Recipes that looks tasty. Wild rice smells like literal garden soil so I know I’m going to need to cook it in chicken broth and throw in some butter to make that palatable. A recipe for roasted broccoli was a flop — the chili powder stuck to the broccoli and totally overpowered it. The rest of the dinner was quite tasty!
