One thing I’ve noticed is that proteins are hard. They are especially hard when I’m in mom-mode all day and want to throw together lunch. “Throw together” in no way means the oven turns on.

So I’m going to get ahead of the game this week and have a ready store of cooked chicken cutlets that I can throw on top of salads. Nothing fancy, just slice chicken breasts into thirds hamburger-bun-style and cook them with butter and tri-mix (kosher salt, black pepper and garlic – I put that ish on everything) in the trusty cast iron skillet.

The Hubs should be able to take some of these to work as well. I hear he’s been hitting up Bojangles and a hot dog cart for lunch so hopefully having these ready to go in the morning will help him out.
