When I’m craving savory…

I am big into the giant portobello mushroom caps these days. They can sub as a hearty bread for whatever you want to put inside. My favorites are pizza sauce, cheese and a pizza topping, or a little mayo, some deli turkey and a bit of cheese on top. Bake them at 350 for about 20 minutes to get it all cooked.

When I need to up my veg intake…

I’m sorry but salads just don’t cut the mustard for me these days. I’ve started making broccoli all the time. A quick steam and a dip of whatever you want (my favorites are either ranch dressing or that ginger steakhouse dressing you can get at hibachi restaurants).

When I want some spice…

Southwestern bowls scratch an itch like none other. Black beans, shredded chicken, avocado, some shredded monterrey jack cheese and picanta salsa. *chef kiss*

When I need to keep it lean and quick…

Two of my absolute favorite proteins are frozen pink salmon and frozen shrimp. Either one can be ready in less than 20 minutes and they are packed with protein. My favorite is a salmon fillet in the air fryer with a little pat of butter on top and sprinkled with lemon salt. When it comes out give it a spritz with lemon juice and lunch is done.
