 8 tbsp butter (melted and cooled)

 ½ cup chopped walnuts
 8 oz cream cheese

Preheat oven to 350. While it is preheating, spread the walnuts on a sheet pan and toast as it warms. Line 12 muffin cups with foil liners AND spray the liners with oil or baking spray.

In a medium bowl, whisk together eggs, pumpkin, butter, apple sugar, vanilla, cinnamon and salt. I don't recommend using a stand mixer's paddle because it sloshes. Consider the icing whisk attachment. Whisk in coconut flour until it is very smooth, then add the baking powder.

Use an ice cream scoop to fill muffin liners.

Divide a cream cheese block into 12 cubes. Press slightly on each cube in the center of the muffin.

Top with toasted walnuts.

Bake for 25 minutes.
